It is normal for field corn (also called grain corn) fields to be dried out and appear brown in the fall, as it must dry on the stalk before being harvested for animal feed or processing. This is different from sweet corn, which is harvested while still green and tender. Farmers in NJ may also be experiencing drier fields than usual due to recent weather patterns, but the appearance of the stalks is a normal part of the field corn lifecycle. 

Field corn vs. sweet corn
* Field corn: This is the type that dries out on the stalk. It’s used for animal feed, cornmeal, and other products, not for eating directly off the cob. The grain must reach a specific low moisture level (around 15%) before it’s harvested.
* Sweet corn: This is the corn you buy at the grocery store or farmers’ market. It is harvested when the kernels are still moist and tender, which is why the plants are still green at harvest time. 

Why fields appear “dried out”
* Maturation: Field corn is intentionally left to mature and dry in the field. This drying process is natural and essential for the grain to be harvested and stored properly.
* Harvesting: Once the kernels have reached a suitable moisture level, a combine harvester can be used to collect the dried grain from the stalks.
* Harvest timing: Dry, warm weather helps the corn dry faster. In late summer and fall, it is normal for many fields to be in the process of drying down before the main harvest season.
* Weather conditions: While the dried-out appearance is normal for field corn, a prolonged lack of rain can accelerate the drying process and stress the plants, potentially impacting crop yields for the season, as was the case in NJ in 2022.
